Hummus

What do you need:

  • 19 onces chickpeas
  • 1/2 tsp baking soda
  • 1 cup Tahini
  • 5 tbsp lemon juice
  • 3 garlic cloves
  • 2 tsp cumin
  • 1 tsp salt
  • pepper
  • 6-10 tbsp ice water

First, heat the chickpeas in warm water, just below boil temperature. Add the 1/2 tsp baking soda. Let this boil for at least 30 minutes. It may cause foam on top of the water. Skin it off with a spoon. While this cooks, prepare the ice water.

When the chickpeas are soft, test it by gently push one without any pressure. When this is easy to do, the chickpeas are ready. Peel the loose skins. This results in a better texture.

Add the chickpeas to a food processor. Mix them around 2 minutes till the result is a nice texture. Sometimes pause the food processor and push down some parts of the chickpeas with a spatula. Continue mixing.

Stop mixing and add 1 cup of Tahini. This will bring everything together and will add a better structure to your hummus. After adding the Tahini, start mixing on low speed.

While mixing add 5 tbsp of lemon juice, 3 chopped garlic cloves, 2 tsp cumin, 1 tsp salt and pepper. Let this mix for a minute and add the ice water bit by bit.

When the texture is smooth, the hummus is ready.

Dutch Pancakes

Dutch Pancakes

  • 2 Cups flour
  • 17 OZ milk
  • 2 eggs
  • salt

Strain the flour in a mixing bowl. Add the eggs and a bit of the milk. While mixing, poor the rest of the milk. finish the dough with a table spoon of salt.

Heat a pan and add some butter. Add the first dose of dough to the pan. Tilt the pan and move it in order to cover the whole pan with dough. Remember, the Dutch pancakes are thin.

After around two minutes flip the pancake. Traditionally this needs to be done without any equipment. However, I can imagine you might need a spatula.

When the pancake is brown on both sides, it’s ready. Finish it off with maple syrup or sugar.

Another variation is by cooking bacon first and poor dough over it once the bacon is cooked.

Satay Sauce

Satay Sause

  • 4 tbsp peanut sause
  • 2 tbsp Kecap Manis
  • 1 1/2 cup coconut milk
  • 1 tsp ginder
  • 2 tsp sambal

Mix all together in a pan while heating up.
